Joining in with a fellow creative spacer this week ~ amityvilleboronia ~ for recipe monday.

I am a huge fan of recipes and cookbooks so was more than happy to join in. Head on over if you too want to find some more recipes.

This week I am sharing my favourite choc-chip cookie recipe adapted from a donna hay recipe. They are my favourite because they do taste good but also because they are quick and easy. Its nothing for me to whip up a batch when panic hits on a school day morning because there is no treats for the small ones’ lunchboxes.

chocolate chip cookies

125g butter, softened
½ teaspoon vanilla extract
1 cup brown sugar
2 eggs
2 cups plain flour, sifted (although sometimes i don’t bother!)
1 teaspoon of baking powder
choc-chips to taste (the recipe says 185g of chocolate broken into chunks ~ I just pile a heap of choc-chips in, whatever I have on hand)

Preheat the oven to 190°. Place the butter, vanilla and sugar in a bowl and beat until creamy. Beat in the eggs. Stir through the flour, baking powder and chocolate.

Roll tablespoons of the mixture into balls. Place on baking trays lined with non-stick baking paper, allowing room for the cookies to spread, and flatten slightly. Bake for 10-12 minutes or until lightly browned. Makes 38. (Mine never make 38 ~ probably cause I roll them bigger)
