Although I have been doing lots of cooking, I couldn’t think of anything to share. And then I realised it was bubbling away in front of me on the stove.
This Hearty Chicken and Vegetable soup is becoming a bit of a staple around here, and is everything it says it is. There is more than enough to go around and share with family and friends and is perfect for wintry days or those sick in bed days.
The best part is it is a great base for whatever you have in the pantry or fridge. The first time I made it (above), it turned out the packet of soup mix I needed wasn’t in the pantry as I thought, so I threw in some pasta. This time no swede or turnip, so I just went without. I also use chicken breasts or chicken minute steaks that my supermarket is currently stocking, instead of legs (because I am just not a fan).

Dear kellie. One of the sad things about moving to Darwin is that I can’t eat so much soup – it’s just too hot! I like making a variation on the above with lamb shanks instead of chook. yum!
