
{more than just tomato on toast}
Wow ~ where is the time going? I had a most uninspiring day yesterday, spent mostly on freelance projects. The day flew by and before I knew it everyone was home and dinner had to be prepared. And there had been a distinct lack of photo taking! Hubby and I ended up with this ~ bruschetta. Which I supplemented with chocolate self-saucing pudding ~ a clash of the approaching summer and the tail-end of winter.
Bruschetta {only limited by your imagination}
Brush crusty bread with oil and chargrill. Chop and scoop out fleshy parts of tomato, mix with extra virgin olive oil and torn up basil. Season.
Break a garlic clove using the blade of the knife then smear the clove over the warm bread. (don’t be fooled ~ the flavour will be stronger than it seems). Top with the tomato mixture.
You can add red onion to your topping, or for something entirely different, top with blue cheese, rocket and walnuts, or whatever takes your fancy. It’s simple, fresh, healthy and yum!
